Homemade Gourmet Burger


hellooo...mau sharing resep nih bikin homemade beef patties dan dijadiin gourmet burger ala resto gitu..kebetulan suami sukaaa bgt sama yang namanya burger,akhirnya saya coba2 bikin burger sendiri supaya lebih sehat juga sih...silahkan dibaca resepnya :



Ingredients (serves 6)


750g beef mince
1 large brown onion, grated
2 garlic cloves, crushed
1 tbs Worcestershire sauce
2 tsp Tabasco sauce (optional), or to taste
1/4 cup chopped fresh continental parsley
70g (1 cup) breadcrumbs, made from day-old bread
1 egg, lightly whisked
Salt & ground black pepper, to taste
2 tbs olive oil
6 hamburger buns, halved / toasted bread
150g cheddar cheese, thinly sliced, to serve
3 medium (about 450g) ripe tomatoes, sliced, to serve

Method :
Prepare all your ingredients before you begin. It is important to use mince from a cut of meat that has a little fat. This will not only add flavour, it also ensures a tender burger by preventing the patties from drying out during cooking.However, mince that is too fatty will expel the excess fat during cooking, causing the patties to shrink and toughen considerably. Topside is the recommended mince for making beef burgers as it contains the right amount of fat.Breadcrumbs are not usually included in the traditional burger patty mixture, but their addition to this recipe helps to give the cooked patties a lighter, more tender texture.The egg acts as a binding ingredient so that the patties can be easily shaped. It also helps them hold together when cooked.


Place the beef mince, onion, garlic Worcestershire sauce, Tabasco sauce parsley, breadcrumbs and egg in large bowl. Season with salt and pepper. Mix with your hands until evenly combined.
Divide the mixture into 6 equal portions (you can use a 125mls / 1/2 cup measuring cup if you like). Shape each portion with your hands into a patty about: 10cm in diameter and 1.5cm thick.
Place the patties onto a tray lined with- greaseproof paper. Cover with plastic wrap and place in the fridge for at least 30 minutes to rest. Chilling the patties will help them hold together when cooked. This also allows the flavours in the patties to blend and develop. If you chill the patties for any longer, increase the cooking time slightly.


Heat half the olive oil in a large, non-stick frying pan over medium-low heat and cook half the patties for about 4 minutes on each side or until browned and cooked through. It is important to cook mince right through because it has a larger ratio of surface area to volume than whole pieces of meat, and is therefore at greater risk of contamination by bacteria in the air. Transfer the patties to a plate, set aside and keep warm. Repeat with the remaining oil and patties.
Meanwhile, preheat grill on high. Place the hamburger buns, cut-side up, under the preheated grill and toast for 1 minute or until golden. Leave the grill on.


To serve, top the bottom halves of the toasted hamburger buns with the patties and then the cheese slices. Return the bottom bun halves under the grill for 1 minute or until the cheese is just melted. Top each with the sliced tomato, tomato sauce and shredded lettuce, sprinkle with salt and pepper and then cover with the hamburger bun tops.


Notes
Prep: 20-25 mins (+ 30 mins chilling time).
Tip: To freeze, separate the patties with non-stick baking paper or freezer wrap, pack flat into freezer bags and seal. Freeze for up to 1 month and transfer to the fridge to defrost 12 hours before cooking.

saya improvisasi dengan mushroom sauce-nya yang di tumis dengan bawang bombay,lalu ditambahkan saus bbq+saus tomat+dijon mustard..dan rasanya asli deh enak hehehe..kaya direstoran gituuuu..geer deh.

Ayam Kuluyuk (kuah asam manis)


Inget jaman kuliah dulu,ada menu ayam kuluyuk enaaaaak banget dan harganya juga muraaah bgt sekitar Rp. 10.000,- /porsi +nasi...dulu cm bisa makan aja,sekarang udah ngerti bumbu jd coba2 aja bikin. Ini dia resepnya :


BAHAN :

1 dada ayam, tanpa tulang potong 2×4 cm

1/2 sendok teh garam,

1/4 sendok teh merica bubuk

1 butir telur, 2 sendok makan air

1/4 sendok teh garam

5 sendok makan tepung maizena

10 sendok makan tepung terigu

1/4 sendok teh baking powder

minyak untuk menggoreng


BAHAN SAUS:

1 siung bawang putih, dimemarkan

1 buah bawang bombay, potong2×2 cm

1/2 buah nanas, potong 1×1 cm (optional)

1 buah cabai merah tanpa biji, potong panjang (optional kalau mau pedas)

1/2 buah ketimun, potong korek api

1 batang daun bawang, potong 1 cm

1 batang wortel iris bentuk korek api

4 sendok makan saus tomat

1/2 sendok teh garam,

2 sendok teh gula pasir

1/4 sendok teh cuka,

350 ml kaldu

2 sendok makan tepung kanji dilarutkan dalam 50 ml air

2 sendok makan minyak goreng


CARA MEMBUAT :

Rendam potongan ayam dalam 1/2 sdt garam dan merica lalu diamkan 20 menit.

Aduk telur, 1/4 sdt garam, dan air lalu sisihkan.
Celupkan potongan ayam dalam telur lalu gulingkan dalam campuran tepung terigu, baking powder, dan maizena yang telah diayak. Goreng ayam sampai matang, sisihkan.
Buat saus, tumis bawang putih dan bawang bombay sampai layu. Tambahkan nanas, cabai merah, ketimun. Aduk sampai setengah layu.
Bumbui saus tomat, garam, gula pasir, dan cuka. Aduk sebentar lalu masukkan gorengan ayam. Aduk rata.
Tuang kaldu dan daun bawang, masak sampai mendidih lalu kentalkan dengan larutan kanji.

Chicken Steak with Cheese Sauce




Resep ini sih hasil karyaku sendiri hehe smoga enak ya..saya pake grilling george foreman yg tinggal dipress doank,kl ga bisa pake grilling biasa aja kali ya?


bahan :

chicken breast fillet 1 pc

saus keju :keju parut

8 sdm tepung terigu

4 sdmbutter/margarine

4 sdm

susu cair 1 gelas

garam merica secukupnya


sayuran,klo saya beli vegetables yg frozen trus direbus pake margarine,trus ditirisin baru dikasih balsamic vinegar sedikit aja.


cara membuat :

dada ayamnya dibagi dua,trus dilumurin garam+merica,baru di panggang sampe matang.


Cara buat saus keju :

panaskan (dengan api kecil) butter sampe melted,masukkan tepung,aduk sampai menggumpal/kental,masukkan susu,aduk rata,masukkan keju,garam merica dan aduk terus sampe kental.udah deh,setelah ayam matang,siram dgn saus kejunya..


resep ini pas banget buat makan malam ...selamat mencoba!!
